Almond and raspberry roulade

Almond and raspberry roulade is ideal summer dessert. A light and airy ground almond sponge cake is rolled up with a fresh cream and raspberry filling for a decadent tea-time treat or dinner party dessert. Roulades consists of sponge cake or cake baked in a flat pan rolled around a filling. Cake rolled around jam, chocolate buttercream, nuts or other fillings, is an example of a sweet roulade like the cake Bejgli or the Swiss roll. The Bûche de Noël or Yule Log is a traditional French Christmas cake roll, often decorated with frosting made to look like bark. Another form of sweet roulade is pumpkin, which is pumpkin flavoured cake rolled around cream cheese frosting.You will need 30 minutes to make this lovely dessert.

Outdoor-grown rhubarb has a sharper taste and more fibrous texture, so requires a slightly longer cooking. Both varieties of rhubarb are good in pies, tarts, fools, jellies and ices. Rhubarb also makes a good jam with grapefruit, and tastes delicious made into a cordial flavoured with rosewater. Orange, vanilla and lavender all complement rhubarb.
